Finally found strings that suit me! As mentioned in the description, polywebs have a warmer and less bright sound than nanowebs, which sound a bit brighter (towards harpsichord to simplify, and phosphor/bronze strings are even brighter I think...). Basically, the polyweb sound is closer to a classical guitar, the sound is less metallic (depending on the guitars as well...) Specifically, if you play quite dry, these strings are ideal, for rhythm or if you like to make each note ring, nanowebs are clearly more appropriate. The protective coating, much thicker than that of nanowebs, is clearly visible and gives a white tint to the strings... Elixir recommends polywebs to avoid the noise of fingers rubbing on the strings but I haven't noticed anything obvious, it's always audible, a little less at the limit. It's Elixir with good durability over time! Polywebs are indeed less "crystalline" and "noisy" than the nanowebs I used before on my electro-acoustic (Alhambra).
